Rocket Pop Wimsicles

Ready for liftoff? Wims style!
These botanical-packed popsicles are blasting off with layers of juicy fruit, creamy coconut milk, and a smooth, grown-up chill. It’s like rocket pops got a glow-up — all fun, no booze, just pure feel-good fuel for your summer adventure.
Step 1
How to Make Simple Syrup
Combine 1 cup water and 1 cup sugar in a small saucepan. Bring to a boil over medium-high heat, then lower the heat and stir until the sugar dissolves. Transfer to a heatproof bowl or jar and let it cool completely.
Step 2
Make the Strawberry Layer
Blend strawberries, lemon zest, lemon juice, and ½ cup of that cooled syrup until smooth. Strain to remove seeds. Stir in chopped basil and snap in your Wims Lemon Basil. Divide evenly among 6 rocket pop molds and freeze until just set—about an 1 hour.
Step 3
Make the Coconut Layer
Rinse the blender. Add coconut milk, 3 tbsp simple syrup, and your Unflavored Wims. Blend until smooth. Pour over the strawberry layer and freeze again until set—about 1 hour.
Step 4
Make the Blueberry Layer
Rinse the blender clean again. Blend blueberries, lime zest, lime juice, 1 tsp grated ginger (optional), and 3 tbsp syrup until smooth. Strain if you want it silky. Snap in your Ginger Lime Wims and stir it in. Pour over the coconut layer, add sticks, and freeze until fully set—at least 4 hours.
Step 5
Pop & Serve
Run molds under warm water for a few seconds to release. Eat immediately, share with friends, or hoard for future hot days. You’ve just made the chillest pops of the summer 🍓🥥🫐
